Update documentation with few jupyter notebook examples

Using nbsphinx-link to include the notebook examples in the documentation. Updating dependency to enstools-encoding to 2022.12. Few typo fixes and formatting. Adding pooch dependency to run the examples using xarray tutorial data.

Remove chunking from transfer_file, we should deal with it in a different way. Update version number.
